Ingredients

  • 4 medium-sized bell peppers tops cut off and seeded
  • 1 lb ground beef or ground turkey
  • 1/2 cup diced onion
  • 1 tbsp olive oil
  • 1/2 cup marinara sauce look for one with no added sugars
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella cheese

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes, or until the onion is translucent.
  • Add the ground beef or ground turkey to the skillet and cook, stirring occasionally, until browned and cooked through. Drain any excess fat from the skillet.
  • Add the marinara sauce, Parmesan cheese, chopped basil, salt, and black pepper to the skillet with the cooked ground beef or turkey. Stir well to combine.
  • Stuff each of the bell peppers with the meat mixture until they are filled to the top.
  • Place the stuffed peppers in a baking dish and bake for 25-30 minutes, or until the peppers are tender and the meat filling is hot and bubbly.
  • Remove the baking dish from the oven and sprinkle the shredded mozzarella cheese over the tops of the stuffed peppers.
  • Return the baking dish to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  • Remove the baking dish from the oven and let the stuffed peppers cool for a few minutes before serving.
