Ingredients

  • 2 eggplants
  • 4 tbsp olive oil
  • 2 eggs
  • 1/2 cup Parmesan cheese
  • 2 cups Keto friendly marinara sauce
  • 2 cups shredded mozzarella cheese

Instructions

  • Preheat the oven to 350°F.
  • Slice the eggplants into 1/2 inch slices.
  • Heat the olive oil in a pan over medium-high heat.
  • Dip the eggplant slices into the egg mixture and then fry them in the pan until they are golden brown.
